Mango cheesecake Miniatures , Eggless and no-bake

             Do you know that you are a woman-of-wonder?

I just heard that a hundred times in the women’s conference that I attended today. My agenda was to prepare these heavenly cheesecake miniatures for the conference, but then, a sudden call and voice on the other end, “Hey! you just forgot its my sonnys bday”. “How did you forget that girl! Facepalm” inner voice at my end. Successfully prepared these  for the bday party, two was left for the conference. Yes the day started with a  top-hit mango cheesecake and ended with a mind blowing cheesecake for me. Before I share about the mango cheesecake, here is a gist about the mind blowing one. Yes, by the word ‘mind blowing”, I refer to the truth and revelation in Bible about women that I heard in the conference which threw me off my seat.

God created human beings;
he created them godlike,
Reflecting God’s nature.
He created them male and female. Gen 1 : 26-27

God created man and woman equal but different. They are like the keys of  two different rooms in a home, which when put together in a keyring give more access to the home.

God designed woman as a man with womb ~ Wo(mb)man. i.e A physical womb, emotional womb, spiritual womb. Any seed that is put in her grows. Husband gives her a seed which grows to a baby. Give her vegetables, she will make a Sambar. Give her an idea, she will give a plan. How wonderful!! How gifted she is!! And, Yeah She is the owner of her beautiful garden 🙂 This space is not just enough for me. Let me know if you would want to hear more. My single heart is not enough to hold the excitement and I would love to share. Now to the mango cheeeeeeeesecake ….

A step by step tutorial below…

I have divided the method into 3 parts. The recipe yields 7 cheesecake miniatures.

Part I – Biscuit Base:

Ingredients:

1 pack Digestive biscuits, I have used nutritive digestive biscuits
2 tbspn melted Butter

Method:

1. Keep all your ingredients ready.
2. Break a pack of biscuits in a mixie/food processor.
3. Powder the biscuits ( little coarse ) in the mixie/food processor.
4. Take the processed biscuits in a bowl and add the melted butter to it.
5. Take the bowls where you want to serve them and butter it. I chose dessert cups, Any glass bowl or jar is fine as they show up the cake very well.
6. cover the bottom of each dessert cup with the biscuit butter mixture, press it tightly and evenly. Keep in freezer to set until you continue doing your rest of the recipe.

Part II – Cheesecake:

Ingredients:

100 gms Cottage cheese/paneer
200 ml Condensed milk, Nestle/Amul Mithai.
100 ml Fresh cream, Amul fresh cream/whipping cream
1 mango Puree
Few mango chunks
1 tbspn Gelatin
Water – 3 tbsp

Method:

The method for this part is shown in two collages.

1. Grate the paneer in a bowl.
2. Add the grated paneer and condensed milk in a mixie/food processor.
3. Grind them for the next couple of minutes to make a smooth puree.
4. Transfer them to a bowl and add fresh cream to them.

1. Take gelatin and water in a bowl and leave it for couple of minutes. Allow it to bloom.
2. Microwave for 20 seconds or slightly heat it in a double boiler, in case you do not have a oven. Keep stirring well until the gelatin granules are dissolved in water and turn off flame.
3. Take puree of one mango and heat it up in a heavy bottom pan until they become hot. Take care not to boil it. Add the gelatin mixture to the mango puree.
4. Add the above mango mix to the bowl with paneer, condensed milk, fresh cream and mix all the contents.
5. Add finely chopped mango chunks.
6. Take out the dessert cups from the freezer and fill them with the cheesecake mix above the biscuit base. Make sure that the cups are 3/4 filled and tap them to remove any air bubbles. Again put it back in freezer until you prepare the topping.

Part III – Topping:

Ingredients:

1/2 Mango puree
1/2 tbspn Gelatin
1 tbspn Water

Method:

1. Take gelatin and water in a bowl and leave it for couple of minutes. Allow it to bloom.
2. Microwave for 20 seconds or slightly heat it in a double boiler, incase you do not have a oven. Keep stirring well until the gelatin granules are dissolved in water and turn off flame.
3. Take puree of one mango and heat it up in a heavy bottom pan until they become heat. Take care not to boil it. Add the gelatin mixture to the mango puree.
4. Take out the dessert cups from the freezer, check if the cheesecake has been set and then pour this mango topping. Slightly tap the dessert cups to remove any air bubbles and again put it back in freezer for the next 2 hours to completely set. Then you can refridgerate them until serving.

My Notes:

1. Recipe variation – mangoes can be replaced with strawberries to make a strawberry cheesecake.
2. I prepared these miniatures for a kids birthday party and served them in the dessert cups itself since removing them out of the cup might make them lose shape. For a full cheesecake version, here is the tutorial which is actually the source of my recipe here.
3. In case you do not find dessert cups, you can put them layer by layer in one glass bowl.
4. In case your cheesecake seems to be crumbly, it means it is not set properly. You can leave it in the fridge little more time or check your gelatin.
5. Vegetarians can substitute gelatin with agar-agar/china grass.
6.  Serve them chilled always.
