The meaning of blanching is “to whiten”, but this is not always the purpose of blanching in cooking. Food is blanched to soften it, or to partly or fully cook it, or to remove a strong taste. Here we will see the steps to blanching broccoli and this can be adopted for any vegetable.
Step 1: Bring adequate amount of water in a bowl to a nice boil, add 1/2 tsp turmeric powder, 2 tsp salt and drop the florets in them. Cook them for 1 – 2 minutes.
Step 2: Drain the broccoli and drop them in ice cold water for a minute, which will stop the cooking.
Step 3: Drain the water. You will see nice bright green blanched broccoli.
