The meaning of blanching is “to whiten”, but this is not always the purpose of blanching in cooking. Food is blanched to soften it, or to partly or fully cook it, or to remove a strong taste. Here we will see the steps to blanching broccoli and this can be adopted for any vegetable.
Step 1: Bring adequate amount of water in a bowl to a nice boil, add 1/2 tsp turmeric powder, 2 tsp salt and drop the florets in them. Cook them for 1 – 2 minutes.


Step 2: Drain the broccoli and drop them in ice cold water for a minute, which will stop the cooking.


Step 3: Drain the water. You will see nice bright green blanched broccoli.

DIY Tuesdays ~ Easy Juicy Popcorn Chicken


When I think of writing about popcorn chicken, something that flashes to my mind immediately is a catchphrase from one of Joel Osteen’s famous motivational messages.

Fake it to Make it

Have you ever watched a Queen entering a ball room full of world’s prettiest actresses, smartest business magnets and wisest men? However, the presence of those top talents will not intimidate the queen because she is well aware of her identity and self-worth. Do you know that we all are children of the most High God? Yes. HIS Royal DNA is within us since we are created in HIS own image. When we are focused on this truth all the time, who can shake us??

So look straight, walk boldly and face anything and everything with a smile. Be the queen that you really are – Because, you are the child of the Most High God . And if you mean to say, “Nooooo!! This is totally hard for me”,here is the key – Fake it to Make it 😀 Lets go to the recipe..

I purposely named it juicy for the juicy taste it leaves in the mouth. Crunchy outside, Soft and flavoured chicken inside becomes absolute bliss with any cheesey dip.


On a honest note, I cheated on few ingredients from the original recipe i.e I skipped them. That is because I wanted to make it simple with daily kitchen ingredients of any home chef. I am very sure, ditto-ing the ingredients of the original recipe would give the besshttt!!

Step by step tutorial below…

Wash chicken and Chop peanut sized pieces so that they are easy to cook. Marinate them with pepper powder, salt, red chilli powder,lemon juice  for 4 to 5 hours in the fridge. This makes the meat tender. I marinated them overnight.


Coat them in a mixture of powdered sugar and maida, so that all the moisture is absorbed.


Coat each piece in a mixture of egg and milk beaten well.


Coat them in a mixture of maida, pepper powder, corn flour, salt, red chilli powder.


Deep fry them in low flame until golden brown. Cover them and cook atleast for a minute. Sprinkle  a mixture of chat masala, little oregano, little maggi seasoning on them and serve hot with any dip you have handy.


My Notes:

1. Serve them hot. Never reheat them, it tends to make it rubbery or hard.
2. Donot over fry or over cook, which will again make the chicken lose the tenderness. It is good to set the golden color as the end point.
3. Marination plays an important role I believe.
4. Sugar in coating-1 gives the sweetness in the popcorn.
5. Before deep frying, it is better to toss the coated chicken pieces in a colander to drop off the excess corn flour. We do this to avoid corn flour becoming spilt and burnt in hot oil.

Mushroom Oats gravy

Yayy!!Back to my baby after a long week :)I wish you sent me a “miss your posts, a sad face smiley msg” 😉 I had an awesome week, how about you ? so this was special- we were busy hosting a surprise baby shower for a dear friend in our church.

A beautiful backdrop with pretty baby outfits pinned on a silk cloth line, a vibrant light setting, a tray full of glossy glass bangles, another tray full of assorted fruits, her throne for which the legs are crowded with plush toys and gifts, two gigantic gorgeous glass trays with the pink and blue cupcakes, pink and blue diaper dolls, an amazing prophetic painting by a 10 year old which we sticked to the cupcake table, all chairs lined up for the audience aaaand the aroma of hot chicken curry n roti ready to be served for dinner. Wonderful know?

She entered the hall with eyes wide open and threw a glee on everyone in the room and of course more on her hubby 😉 This is how the function started.

I must definitely write about how the function ended. Of course, dinner. Before that, there was a wonderful msg on supernatural childbirth shared by one of our dear aunty. A new term, is it ? With God, you can always go all out and aim high. Yes, for a no-labour and a painless childbirth too !! Wonderful promises from the most faithful gentleman Mr.J ( thats how I call my daddy God when I feel soooo good about HIM ) Any man/woman can take God’s word and change his/her circumstances through faith and prayer. I believe someone reading this came here for mushroom oats gravy but, you wanted this too!!


Here you see what you will need..


Here is what you will need to make a smooth paste..



1. Make a fine paste with the items to grind. First without water, then add water little by little.



2. Clean the chopped mushrooms by soaking them in hot water with little turmeric for one minute.



1. Heat oil in a heavy bottomed pan, add oil/ghee, slit green chilli and the big onions. Fry them until they turn golden.


2. Add in the tomatoes, little salt and cook in a low flame for the next two minutes


3. Add the oats and give it a nice stir. Add 4 tbspn water and cover it cooked in medium flame until the oats become soft.


4. Add red chilly powder, coriander powder. Give a nice stir.


5. Now add in the mushrooms and stir them in a medium flame for the next two minutes.


6. Add the ground paste and give it a boil for the next 5 minutes in low flame. Add coriander leaves to garnish.


A total healthy tasty sabzi ready.. Goes well with chapathis/rotis/phulkas/pooris.

DIY Tuesdays ~ Sweet Mango Pickle

Beginning the DIY Tuesdays with a top hit and a easy peasy pickle from my Mom-in-Grace kitchen 🙂

The delicious sweetness of the almost ripen mangoes with the hotness of the chilly powder and aroma of asafoetida, just a heaven in your mouth. I definitely should mention the crunchiness that the skin gives in between your tooth. Drooling!! You should definitely try it out before the season ends.

Okay, I also wanted to remind you again that God loves you so much!! Yes and no matter what, He loves you!! Bible says in Romans 5:5 Now hope does not disappoint, because the love of God has been poured out in our hearts


Being conscious of how much God loves you gives you a hope that does not disappoint.

Okay, Someone reading wanted this word. Yes, Know God’s love for you and expect good. Now expect a good pickle 🙂


A step by step tutorial below..

I took a picture of the mango to show you which one to choose?

1) Almost ripen mango, not so soft or mushy texture, has good amount of sweetness and of thick skin. Chop them. Keep ready the ingredients as well.


2) Heat oil in a hot bottomed pan, add mustard seeds. Once they splutter, add the asafoetida, fenugreek powder.


3) Add the chopped mangoes, give it a nice stir in the oil, add salt and cover it cooked for the next 3 minutes.


4) Uncover the pan, add chilli powder, press through the mangoes so that they blend a little and cook them for the next five minutes in low flame until they become soft.

5) Check seasoning and switch off the flame.



My Notes:

1) Store in fridge door – 1 month
2) Store in kitchen counter – 1 week
3) A total bliss with curd rice and dal rice.

Whole Wheat Nutella Momos, 2-ingredient Snack

That day I made everything clumsy, woke up late, cooked a bad meal, seem to have no interest in work whiled away hours in Face book. Waiting to have a healthy argument with him in the evening to settle yester-night disagreement between us. While browsing the facebook I suddenly happen to read this man’s page – Danny Lee Silk. On reading it post by post, it was so amazing that I felt it’s talking to me. I strongly suggest you should visit this page to understand, how everything about relationship is defined by the term “Keep Your Love ON” no matter what! He Proclaims. Also wrote the book Titled KYLO – Keep Your Love On, one of the bestselling books off the shelves now. On encountering this amazement, I immediately purchased the digital version of the book KYLO and started reading on my tablet.

While reading the book, I stuck to a particular page because of the things it spoke about ” Love Languages”. Oh! Love languages…. seriously? Reading it again and again coming back to it again and again. Love languages are like different types of fuel? Then telling to myself “read it again”…and then went on to understand that “Every person usually has one primary way that he or she receives and shows love – one type of fuel that fills up his or her “love tank.” It’s very essential to fill people’s love tanks with the language they need in order to function and feel connected in a relationship. “Okay, let me stop the intro here”.

The love languages are,
1. Touch
2. Acts of Service
3. Gifts
4. Quality Time
5. Words of affirmation

“I bookmarked the page, locked my tablet, took a deep breath and thanked God for the revelation on “how to understand  my Hubby’s love language”. Having been in relationship with him for more than a year and remembering  what he loved the most and what will fill up his love tanks, I concluded his love language is “2. Acts of service”. I was convinced that instead of arguments, let me choose to use the love language so he can be filled. As I walked to kitchen, in my mind  thinking about the dishes he always wanted me to make and I never did, thank God! for good memory. “Momos” .. Yayyy! I remembered how he asks for momos in a pleading baby tone ( moomoos 😉 ) Finally, for the first time, that night I made momos with 3 variety stuuffings of which this was the best hit nutella momos. From then on, whenever he wanted a easy snack, I go for nutella momos 🙂 Thats my nutella momo story.. so, whats yours? 🙂

My Notes:

1. Electric Cooker can be replaced with idli cooker with a perforated plate like above/ any kind of steamer.

2. If you do not have any of them, you can try something like this, but keep the momos covered while they are cooking.

3. Momos when overcooked, become hard. when undercooked, you got to eat the dough. so keep an eye.

4. My momos were very small. You can adjust your cooking time from 5 to 10 minutes dependednt on the size. A sheen on the wheat skin is the endpoint of cooking.

3. Hot water in kneading the dough makes it soft. So, please do not skip it.

Era thokku or Prawn Masala, Kerala style

Today as I was reading through Victoria Osteen’s blog….. Oh wait! For those who do not know, Vic Osteen – She pastors at the Lakewood church USA along with her husband, Joel Osteen. And, Joel is the most watched inspirational figure in America. I am a big big fan of this awesome lady.

She had shared something very important in her recent post, which spoke to me. It might have a message to you too!

It’s sort of like using one of those GPS systems in your car. You set the location to where you want to go, and the GPS calculates the best route. You can be driving along and get distracted and completely miss the street where the GPS instructed you to turn, but that doesn’t mean you’ll never reach your destination. You wouldn’t just pull off to the side of the road crying and say, “Now I’m stuck here. I’ll never get where I need to go all because I missed my turn!” No, there’s always another way to get there. In fact, that GPS system will instantly recalculate the route to your destination based on your present location.

Well, God works in a similar way. He is constantly giving us direction, speaking to our hearts, leading us by granting peace or unrest in our spirits. But even when we miss His instructions—and we all do from time to time—He will recalculate our route and get us back where we need to be.

God will get you back on track toward the wonderful destiny He has prepared for you!

And here comes the delish of the day. Era thokku / Prawn Masala. The flavor infused in this curry is just awesome. You will enjoy as you cook it. A no-fuss, no-grind, easy-to-do recipe.

Curd rice, era thokku and few mango slices… Bliss… Mouth-watering…


A step by step tutorial here…


1) Clean the prawn well and drain the excess water in a strainer.



1) Heat oil in a heavy bottomed pan. Once the oil is hot, add the green chillies, ginger garlic paste and curry leaves. Saute them until the raw smell of the paste goes off.


2) Add the onions and fry them in a medium flame until golden brown. It took me 10 minutes because the oil was less, having absorbed by the ginger garlic paste.


3) Add chilly powder, turmeric powder, coriander powder, saute for next one minute in medium flame.


4) Add the tomatoes, few salt, cook them covered in slow flame for the next 5 minutes. Keep stirring regulary to ensure that there is no burns.


5) Add the prawns, give a nice stir so that it is fully coated with the masala. Check for salt and add if required.


6) Prawns release lot of water. Cook them covered for the next ten minutes in medium flame with regular stirring in between.


7) Check if the prawn is cooked and add few tbspn of water if you want the dish in a pouring consistency. I did not add water. Allow the prawn masala to cook for another 1 minute and switch off the flame.


My notes:

1) Coconut oil can be replaced by the regular oil that you use in your kitchen.
However, coconut oil gives a unique flavor.
2) Fresh ginger garlic paste is preferred over store-bought ones.
3) This can be served with rotis, rice, curd rice.
